Spiralised Veggie Recipes

As you have hopefully seen from our homepage, flyers and social media: we’ve recently launched a range of fresh prepared vegetables. Products include popular items, such as: sliced tomato and cucumber, dry slaw mixes and mixed salad bags/pots.

All of these products are freshly prepared, taking the hassle out of food prep and saving you time.

We’ve prepared some recipes below, giving you some new ways to serve our spiralised beetroot and butternut squash – all featuring ingredients from our product range.

Spiralised Beetroot & Feta – serves 2

Ingredients

70947 – Spiralised Beetroot – 300g
58542 – Sliced Tomato – 7-8 slices (approx. 120g)
51251 – Garlic Paste – 1tsp (approx. 5g)
34150 – Dried Parsley – 1tsp (approx. 5g)
38984 – Dried Coriander – 1tsp (approx. 5g)
41452 – Lemon Juice – 2tsp (approx. 10ml)
46351 – Mixed Stoneless Olives – 60g
62054 – Olive Oil – 1tbsp (approx. 15ml)
61310 – Greek Feta – 200g

 

Method

1 – Mix together all ingredients, except the cheese & tomato slices, in a bowl.

2 – Place block of cheese in ovenproof dish, top and surround with the beetroot mixture. Cover with foil and bake for 20 mins at 200c

Serve hot and garnish with fresh parsley and tomato slices.

 

Serving Options – To serve this as a cold salad, leave out the dried herbs, mix the garlic paste, oil and lemon juice together as a dressing and serve with the feta crumbled on top, on a bed of 86020 – Italian Salad or 32681 – Salad bowl.

You could also substitute the feta cheese in both the hot or cold options, for 25945 – Halloumi – you can grill cubes or slices or leave as a block if baking with the beetroot.

 

Butternut Squash ‘Pasta’ – serves 2

67065 – Spiralised Butternut Squash – 300g
62054 – Olive Oil – 1tbsp (approx. 15ml)
65969 – Heavy Cooked Streaky Bacon – 6 slices (approx. 40g)
26189 – Sliced White Onion – 150g
51251 – Garlic Paste – 2tsp (approx. 10g)
11366 – Washed Spinach – 60g
80220 – Mozzarella Ball – 125g

 

Method

1 – Toss Spiralised Butternut Squash with olive oil, salt and pepper. Heat for a few minutes in a frying pan on medium heat, until beginning to soften. Remove from pan and set aside.

2 – Return pan to medium heat and fry onions until browning, add garlic paste and mix through the butternut squash.

3 – Turn down the heat and add in a few splashes of water, chopped spinach and slices of the mozzarella cheese. Stir together to combine.

4 – Transfer to serving plates, sprinkle over some chopped crispy bacon and season.

 

Serving Options – You could use a harder cheese if preferred. Serving with a sprinkling of parmesan or grated cheddar.

Our fresh Spiralised Courgette (18066), Carrot (30545) and Golden Beetroot (88178) can also be served raw in salads – perfect for adding some colour, crunch and flavour to your sides
